COT SPEARHEADS SKILLS TRAINING ON TOCINO AND LONGANISA MAKING

On March 16, 2024, the College of Industrial Technology (COT) Extension Services Unit (ESU), together with the Local Government Unit (LGU) of Sipocot, and Sipocot Council of Women (SCW) Inc., spearheaded a training on Tocino and Longanisa making, at the Liga Building of the Municipality of Sipocot.

Prof. Charmayn N. Nate and Mr. Arqui G. Abraham, introduced the participants of the activity. It was followed by the warm opening remarks delivered by Mrs. Aileen F. Paitan, COT Program Chairperson. Subsequently, an encouraging and inspirational message was given by Mrs. Maria Elena Macalintal, President of SCW.

Officially starting the program, Prof. Nate presented the rationale of the activity and introduced the list of resource speakers. The training started with the lecture on safety and sanitation, discussed by the first resource speaker, Ms. Maricel C. Diokno. It was followed by a discussion about basic tools and equipment used in food processing, given by Prof. Maria Liliosa S. Agor and Mr. Lendon Villote.

Thereafter, an informative lecture about meat safety: selection, handling, and storing was discussed by Prof. Myrna S. Navarroza. Furthermore, Ms. Jenelyn A. Reodique discussed the different methods of food processing, followed by a comprehensive lecture about the function and usage of ingredients by Ms. Carmella O. Silva. Packaging and labeling of the products were discussed by Mrs. Baby Eloisa L. Peรฑano.

The afternoon program focused on the application of skills in making pork tocino and skinless longanisa. It was facilitated by the faculty resource person and facilitators, Mrs. Aileen F. Paitan and Prof. Myrna S. Navarroza, together with Ms. Rizza Mae Terceรฑo and Mr. Mark Jason Taming, student extensionists. Thereafter, the training evaluation started, which was headed by Prof. Salvacion A. Eje, COT faculty Extensionists and facilitators. Subsequently, the participants in the activity presented their finished product and selected participants were chosen to give their impressions about the training.

Mrs. Aileen F. Paitan and Mrs. Baby Eloisa Lingao-Peรฑano, led the awarding of certificates to the participants and resource speakers of the activity. Subsequently, Mrs. Baby Eloisa L.
